Whether it’s a cozy weeknight dinner or a special occasion, this recipe is sure to be a favorite.
Ingredients
- 4–6 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes (optional, for a little heat)
- Salt and ground black pepper, to taste
- ½ cup diced onion (optional)
- 2 cloves garlic, minced (or about 2 teaspoons)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ cup chopped sun-dried tomatoes
- Fresh parsley or basil, for garnish (optional)
Instructions
- Season the chicken.
Pat the chicken thighs dry with paper towels. Season both sides with onion powder, garlic powder, paprika, oregano, salt, and black pepper. - Sear the chicken.
Heat the olive oil in a large skillet over medium-high heat. If using the diced onion, sauté it for 3–4 minutes until softened. Add the minced garlic and cook for about 30 seconds, or until fragrant.
Add the seasoned chicken thighs and sear for 4–5 minutes per side, until golden brown. The chicken does not need to be fully cooked at this stage. Remove from the skillet and set aside. - Make the creamy sauce.
Pour the chicken broth into the same skillet and scrape up the flavorful browned bits from the bottom of the pan. Stir in the heavy cream, Parmesan cheese, chopped sun-dried tomatoes, and chili flakes (if using). Stir until the cheese has melted and the sauce is smooth. Let the sauce simmer for 2–3 minutes, or until it begins to thicken slightly. - Finish cooking.
Return the chicken to the skillet and spoon the sauce over each piece. Reduce the heat to low and simmer for 8–10 minutes, or until the chicken reaches an internal temperature of 165°F and is fully cooked. - Serve and enjoy.
Garnish with freshly chopped parsley or basil before serving.
Serving Suggestions
This chicken pairs beautifully with:
- Creamy mashed potatoes
- Fettuccine or your favorite pasta
- Fluffy white rice
- Garlic bread
- Roasted asparagus, broccoli, or green beans
- A fresh Caesar or garden salad
Tips
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- If the sauce becomes too thick, stir in a splash of chicken broth or heavy cream until it reaches your desired consistency.
- Sun-dried tomatoes packed in oil add even more flavor—just be sure to drain them before using.
- Add extra chili flakes if you like a little more heat.
Enjoy this easy Marry Me Chicken as a comforting family dinner that’s creamy, flavorful, and perfect for serving over your favorite side to soak up every last drop of the delicious sauce!
